I got this “vegan spicy miso” ramen from a place in Shibuya Tokyo and I can’t stop thinking about it but I have no idea how to replicate it. Pls guess the ingredients so I can try to make it at home because no “vegan spicy miso” recipes online look quite right.
Some ingredients are obvious:
– soy meal
– egg
– miso
But I have no idea what the root vegetable on top is, or what other spices would be in the sauce.

The orange is potentially sweet potato. The green looks like it could be spring onions.
Edit to ask: what is an egg doing in a vegan ramen? Was it an optional add in?

This looks like tantanmen to me! The broth is based off of the Chinese noodle dish ‘dandan mian’ and has sesame paste and chili powder. The fried veggies on top look like thinly sliced burdock root. The red powder on top looks like shichimi togarashi, a japanese seasoning blend. Did you taste any numbing flavors? They may or may not have added sichuan peppercorns. For base broth perhaps a dashi of kombu and dried shiitake
Vegetable on top is as said probably burdock root (gobo ごぼ) but if not, it might be bamboo shoot (menma メンマ)
