I actually tried to aim for rare-medium rare with the thermometer(pulled the rarer one at 46C internal) but did not expect how much they would cook while resting.
Things I learned: don’t over salt the duxelles(since every recipe says to be generous with salt). It tastes like heaven if salted just right, and can almost ruin the experience if salted too much. Also, use your own blend of different mushrooms you like, don’t just use one bland type. The one with whiskey also tasted better than the one with white wine but that could of course be entirely subjective.
Remove whole thyme sprigs and such before assembling, and be generous when brushing dijon mustard on the filet.
If you want to make a ”different” puff pastry pattern design like the first one, use a small blade like a scalpel and be patient because it’s a whole process in itself which kind of sucked.
