Perfect for backyard barbecues and family dinners, these chicken kebabs are packed with taste in every bite. Giving the chicken a good pounding before starting and then marinating chicken kebabs in yogurt and spices before grilling is a game-changer for both flavor and tenderness. The yogurt helps create a beautiful golden-brown crust and acts as a natural tenderizer ensuring each bite is incredibly juicy and moist. The skewered format makes it easy to incorporate a variety of vegetables to the dish and if you serve them over rice, you have a perfect summer meal!

Ingredients:

2 large chicken breasts
1 5oz. container Greek yogurt
2 Tbs. olive oil
1 tea. paprika
½ tea. turmeric
½ tea. onion powder
½ tea. garlic powder
½ tea. cayenne pepper
½ tea. salt
½ tea. pepper
3 lemons cut in half

Recipe:

Pound chicken until it no longer feels dense.

Cut into bite-size square pieces.

Toss chicken pieces into a large zip lock bag.

In a bowl combine marinade: yogurt, oil, paprika, turmeric, onion powder, garlic powder, cayenne pepper, salt and pepper.

Pour marinade into the bag with the chicken and combine well. Be sure marinade is spread over all the chicken pieces.

Flatten the bag, expelling air, zip up the bag and put into the refrigerator for at least 6 hours. Flip the bag onto the other side half way through.

Skewer the chicken with metal skewers.

Preheat grill to 450 degrees. Rub grill racks with oil.

Place the skewers on the hot rack and grill for 3-4 minutes until charred and lifts from the racks.

Flip to the other side and grill another 3 – 4 minutes.

Remove from the grill and let rest for 3 minutes.

Place lemons face down on the grill for a 3 minutes until charred.

Squeeze one lemon over all the chicken kebabs.

Serve chicken kebabs with lemon halves, vegetables and rice. Enjoy!
