My local sushi place (owned by Koreans) makes a “spicy red paste”. Thick sweet and spicy gochujang/gochugaru sesame mix. Any idea what it is?

    Bad picture but the only one I could find. It is a thick consistency and is NOT chojang. I’ve asked what is in it but they won’t tell! It is thick and almost jelly like. There is either gochugaru or ground sesame in it based on the texture. It is spicy and sweet with hint of sesame. It is SO good and I want to recreate it.

    Is this a typical Korean sauce or Korean/japanese/sushi sauce? I’ve never seen it at other sushi restaurants and it tastes very Korean. Please help!

    It doesn’t look to be ssamjang so probably just gochugaru mixed with a couple different seasonings! Most likely garlic, soy sauce, sugar, sesame oil.

  3. It looks like yangnyeom sauce, which is close to chojang.

  4. sweet and spicy is too broad, how does it compare/different from chojang.

  5. Are you 100% sure there is gochugaru in there?

    If they won’t say it’s probably not a standard recipe/sauce. Not everything will have a name. For example you can millions of sauces containing mushrooms all over the world. Doesn’t mean they all will all have a name and a recipe that is known. Or even a named recipe they are similar to.

    If the recipe was a known one in Korea they probably would have told you. If it isn’t I’m afraid a description isn’t enough to determine the recipe or ingredients.
