-Champagne served for the aperitif, Great length, very fine bubbles, this mineral side that passes very well in the mouth and a very good salinity accompanied by a winey side from the vintage.

-The bottle of Louis Latour allowed us to make a junction between champagne and wine, very fine, linear and direct tasting, lively and fresh very inclined to the mineral

-The first pairing was the Clos Blanc de Vougeot on shrimp with white butter, accompanied by a leek fondue. Very expressive wine, buttery and toaster aromas, almost brioche, typical of this kind of white burgundy, a pure long and very round delight in the mouth.

-Next stop, Corton grand cru 2019, enjoy on veal rice with morel sauce, flying in the wind of small vegetables and grated fresh truffles on top. Incredible aromas of truffles in the wine, very fine and delicate, with a great depth that recalls the darker terroirs of the appellation, a finish on the freshness to note all the same

-And finally, a little sugar to sweeten this dinner! Chateau Raspide 2007 on the Barsac appellation, the agreement with a lemon meringue pie was great. On the aromas of candied citrus fruits, exotic fruits, but with a very good balance and a freshness worthy of a young liqueur, blindly we would have been wrong for sure.

It was my birthday dinner with my friends, who prepared all the dishes served, everything was homemade (Except the pie).

They offered me a Chambolle Musigny 2019 "Les Bas Doix" from the Domaine Amiot-Servelles… tasting to come 🤘🏻
