First overnight cook. Bottom round at 131 for 24 hours.
Followed by a quick season and sear for 30 seconds on each side. Delicious! I’m going to try again sometime with a lower grade to see how much of the tenderness is from the long cook compared to the marbling.

Same technique does wonders for a cheapo on sale grocery store bottom round, I can only imagine what that one was like.
