130 grams starter
325 g water
12 g salt
12 g honey
12 g olive oil
500 g flour

Mixed, 4 rounds of stretch and folds, 6 hour bulk ferment, shape, counter proofed for 1 hour, second shape, baked at 375 in my Dutch oven for 25 mins with the lid on, 15 with the lid off until it reach between 200-210 degrees.
