The original, or authentic recipe of this Italian pasta dish has only three ingredients – fettuccine, butter and Parmigiano Reggiano. Nothing more, nothing less. And this is where its beauty lies – in it’s simplicity, just like a lot of other Italian dishes. It is irresistibly creamy, cheesy and smooth, while not being heavy at the same time. I think that this is a characteristic that all pasta sauces that use the emulsion of the cooking water share. It is absolutely delightful!
