Ingredients:
– 2 chicken breasts (boneless, skinless)
– 1/3 cup all-purpose flour (for dredging)
– 2 tbsp olive oil
– 3 tbsp unsalted butter
– 1/4 cup white wine (optional, or substitute with chicken broth)
– 1 cup chicken broth
– 2 tbsp lemon juice (freshly squeezed)
– 2 tbsp capers (drained)
– 1 tbsp fresh parsley (chopped, for garnish)
Note: Chopped shallot, onion and garlic are now added as an extra to the original style of cooking. Always taste and adjust; add what you like.

What a delicious dish to see on your channel. Last summer my granddaughter and her new husband treated both families to dinner at a fancy restaurant in Kansas City. I ordered their chicken piccata. As a sort of southern person with only having had fried chicken or chicken and noodles, I ordered this just to surprise myself. It was one of the most delicious meals i had ever eaten. And here you have an easy recipe for me to make. And just as doon as I get my smell and taste back from having the flu, I'm treating my family to your recipe. You make things so easy. This is a great dish(you slapped that chicken around like it did something to you lol). Italian American food is of course not genuine Italian. Those old folks had to adapt to the new country, and what was available and cheap…that doesn't mean it's not delicious. Good one Rik 🙂

As an Italian American myself I appreciate Rik making the distinction between our cuisine and Italian cuisine. They're related but not the same, sort of like how British Indian food is related to but not the same as Indian food. This dish is a childhood favorite. Rik's recipe isn't quite the way my grandma made it but if I got this in a restaurant I'd be pleased with it.
