Nice. There’s a ramen place in Tokyo called Housenka that makes their broth from kinmedai scraps. It’s really good.

I’ve never thought of using a honesuki for fish this size. Looks like it works pretty great!

Your sanmai oroshi is quite interesting, as you keep the ribs on the fish. I’ve seen this before I’ve just never done it myself
