Minestrone Napoletana

I made Minestrone Napoletana today, from The Silver Spoon.

Had to make a few changes due to ingredient availability. Namely the yellow capsicum, eggplant, and escarole. But it was still delicious! I think if I would add more tomato if I wanted it more to my liking (plus the tomatoes I had available were quite weak in flavour). Overall very easy recipe, except that I had to go back to the store after I ordered pancetta because they delivered prosciutto instead.
