1 – three cuts of tuna, salmon and Santa Barbara uni over rice

2 – fatty salmon gunkan topped with black tobiko, spicy, crunchy, scallop, gunkan topped with togorashi, torched fatty tuna topped with a lemon seaweed aïoli

3 – various tuna & green onion, and salmon, yellowtail cucumber rolls.

4 – yellowtail around the perimeter and yellow tail belly in the center topped with minced red radish and Serano peppers. The sauce is 50% soy sauce and 50% fresh squeezed, orange juice and the juice of two limes.

5 – ordered more farmed bluefin tuna

6 – simple lunch of leftovers, squid and octopus salad, salmon and scallops, cucumbers sunomono and some avocado over rice

7 – seven types of roles from left to right – salmon avocado topped with tobiko, akami tuna and green onion, vegetable roll towards the top, eel and cucumber topped with avocado, running down the center, spicy tuna towards the bottom, yellowtail jalapeño with yuzu kosho, finally a spicy scallop with a little extra Sriracha on top
