Cold Pizza without any mozzarella? Doesn’t exactly sounds great on paper, but it’s actually so delicious. Tomato pie really allows a well made tomato sauce to shine on top of a well made focaccia. It’s the perfect appetizer to bring to a party or tailgate.
Learn how to make this pizza from making the dough, blending the sauce, and cooking it in your home oven.
The dough recipe is 357 grams of water (which is about 1.5 cups, cool or lukewarm is fine), 6 grams or two teaspoons of yeast, 525 grams of bread flour (which is about 3.5 cups), 12 grams or a tablespoon of sugar, If you have it I recommend 10 grams or a tablespoon of malt powder to get extra browning on the crust, 12 grams or two teaspoons of seat salt or kosher salt, and 26 grams or two tablespoons of extra virgin olive oil.
This is a 68% hydration dough.

I've been wanting this recipe!!! Thank you!!!
Oh and where can I get jersey devil tomato seeds for this upcoming spring? I almost forgot to ask.
Thanks!
Very interesting. I knew a girl in college from Trenton, NJ who spoke about “tomato pie.” I had no idea what she was talking about. Thank you for the education. I will add this my repertoire of pizzas I make.
68% hydration. Cool. When I was a little kid, my friend's Italian mother used to make pizza that looked like that. I only got to try it once or twice. Me thinks it disappeared quickly.
Always love how much time you spend to take it slow and ensure each detail pops out and everything is super clear! I'm going to have to try this one
We love tomato pie! 👏🏻
