    Still very novice, especially working with Japanese markets through an American broker.

    What I had special ordered was:

    Kinmedai

    Kuromutsu

    Kawahagi

    Saba

    Kohada

    The rest i bought through their American wholesale operations or various local markets.

    Also, when you’re looking at your pricing, your lists, which are usually updated on a monthly basis, should show “wild” and “farmed.” Try not to buy into the hype of wild all the time if you have a farmed version available. So far, all of my farmed fish varieties have been EXCELLENT.
