An incredible wine! Champagne does Burgundy: An explosive floral nose of peonies and roses, rich with cranberries and cherries on top of a distinctive whole cluster herbaceousness. With more air, vanilla, almonds, and brioche emerge.

This wine has the fruit profile of a top burgundy with the minerality and structure of champagne. The palate carries through on the promises made by the nose, bringing red fruits, flowers, chapparal, and toasty notes. A creamy rich palate is balanced by percise acidity (3g/L dosage) and an intense salty minerality.

Rose de saignée from 40 year old pinot noir vines in the montagne de Reims. Whole cluster fermentation with 60 hours of skin contact and 10 months lees aging in barrel.

    Thanks for the notes on this! Love Benoit Lahaye but haven’t tried his rose yet. Will have to seek it out.

    As as aside, isn’t saignee different from maceration?
