Kidney Bean Curry: https://www.plantwhys.com/blog/kidney-bean-curry
For the Chickpea Alfredo, just swap out the tofu for a can of rinsed and drained chickpeas. And you can omit the salt then wait to add the salt at the end to taste: https://www.plantwhys.com/blog/tofu-alfredo
This is the chili recipe I referenced that tastes better than using that dollar store mix. You can omit the TVP if you don’t have it: https://www.plantwhys.com/blog/meaty-tvp-chili
The other meals didn’t really follow a recipe, just throw in the ingredients listed for a quick meal!

  1. ONLY rinse your rice before you cook it yuck 🤢 not after- pasta is only to be rinsed if making a pasta salad…(I do have a culinary degree before anyone comes at me)

  2. With the canned tomatoes, just stick a pair of scissors into the can and snip away to cut them down to petite size.

  3. I just found your channel and feel so grateful. I need to lose a lot of weight for my health, and my doctor advised a vegan diet… that was over a year ago and I felt stumped and didn't know where to begin. I am a really picky eater, but I love basic frozen veggies, lentils, rice, beans, etc. so your videos have been an absolute gem! I am going to the dollar store tomorrow with a shopping list and finally feel like I have a realistic plan that I am excited about with easy and simple foods I actually love.

  4. When I was living alone in the 1990s and eking out an existence working an underpaid job I was always going to the dollar stores for dry and canned goods like this that I could make meals out of. Unfortunately (or fortunately depending on how you see it) that experience has stuck with me and I still eat like this most of the time.

  5. My adult meat-eating kids really like the Garbanzo Alfredo and so did I. I wished I had watched your video sooner. I intend to try the others. Super fast, super yummy! Thanks!

  6. You can feed your family for $5 like this vs $5 at McDonald’s for one person if you are lucky. Don’t even get me started on the health benefits! Great vid!

  7. Please make a video for replacing tomatoes in recipes. I sometimes use jarred roasted red peppers, but I cannot afford to do that every time. Even fresh red pepper is expensive most of the year if I roast them myself (not a fan of doing that too often either).

I don’t like beets, at least fresh but read sometimes pickled beets taste less bad to people who don’t like them—they taste like dirt to me! Hoping the pickled kind is better!

Unfortunately I don’t like squash / pumpkin either.

But there are probably other people who can’t eat tomatoes who are less picky than me who would benefit from a video like that 😂
