    I’ve never tried the snake method. I usually use my 2 charcoal baskets and put an empty pan in the middle to catch the drippings. Then use the same pan when I wrap them up. But I use apple juice in the pan. It gives the ribs a flavor that I love. If you try it, make sure you cover with foil so liquid doesn’t evaporate. It will burn the bottom of the ribs if it does.

    I am not sure where you are starting your fire but 2 or 3 of those wood chunks are likely to do nothing for your cook. I would move all of them counter clockwise to be closer to the large chunk as they need to be in the first 1/3 of your cook.

    How are you heating the coals? I use the indirect method and the gas starter to fire mine up, then spread them. Also, when is the last time you cleaned the sides. Cleaner bowl allows more convection heat to circulate.
