Chewy Almond Cookies

3 1/4 C Almond Flour
1 1/4 C Sugar
2 Eggs – room temp
2 – 3 tsp Almond Extract
1/2 tsp Salt
Powdered Sugar for dusting

Let the eggs sit out at least 15 minutes.

In a large bowl whisk the eggs & sugar until well mixed. Add extract and salt.
Stir in the almond flour until well blended. Dough will be stiff.

Roll into 1 – 2″ balls and place on a baking sheet.

Bake @ 350 for 15 to 17 minutes. Remove to a wire rack.

Let cool completely. Dust with powdered sugar
