Chuck roast just over 4lbs 4.5 hours at 131 seared on open flame burner. Kinders prime steak, butter, fresh thyme and rosemary. Turned out better than I expected very close to a prime rib but 1/2 the price.

    Chuck needs at least 24 hours, and up to 48. If it was tender, I’d guess that the cut was mislabeled.
