Whenever i thaw something out with running water my head chef will inevitably put it into soaking water and it drives me in-fucking-sane

Oh my old 55 year old dishie with 9 teeth showed me this neat trick where you keep pouring boiling water into a bucket with the meat in it. Super cool and totally safe and normal life hack lol

I used to work at a place that got frozen tuna steaks. It was always fun to realize no one pulled them when I got an order and had to run down to the basement freezer and thaw one in the sink while being the only one on the line for lunch. God that place was a mess.

Plastic hotel pan may get you there slightly faster or at least something to consider in the future; that metal against the frozen meat keeps that underside colder than one would expect and before you know it your meat thaws on top, only to flip it and find the bottom still frozen!
