Vegetarian Christmas Sushi

    Took me some 7ish hours to make this for my girlfriend and me for Christmas dinner. Her family always eats fish on that holiday so I usually make vegetarian sushi for us to fit the mood. Hope you find some inspiration in it!

    Looks delicious! It’s crazy how similar you can get vegetarian and vegan food to look and taste like animal protein.

    Jelly fungus like witches butter is neutral flavored but soaked in soy sauce or ponzu and Wasabi is really good and melts in your mouth like escolar kinda.

    Kelp powder, spirulina powder, fried oyster, porcini, and matsutake really give me seafood vibes, texture, and flavor. Haven’t used the water it comes in, but shirataki noodles have such a fishy smell to them before you drain them and definitely have some fish flavor to them.

    Cauliflower mushrooms and extra firm squeezed tofu broken up into uneven chunks, dipped in seasoned chickpea flour, then air fried look so much like chicken to me, it’s crazy.

    Chickpea flour and black salt for an omelet alternative, or tofu and black salt for a scrambled egg alternative.

    I have no dietary restrictions, but I love exploring new foods, flavors, and recipes. I definitely gotta make something like this sometime!

    I usually make one veggie roll and one or two un-raw rolls when I take a tray to friends. The zalmon looks smashing. I’ll have to try that some time.
