    Looks great…I would lose the rub tho. Picahna is a beautiful cut that only needs salt and pepper, with a chimichurri sauce at best

    So I just had my own first one tonight.
    Sous vide to 110° for 3h then sliced individually and put each piece on a ripping hot stainless. 1 min on the fat cap followed by 30 seconds on each side.
    First piece was very juicy but mad chewy. Second was juicy and tender. Both sliced the same direction and on an angle. Have any keys to success? Still have 3/4 of the thing in a ziplock in the fridge for meals this week

    As a Brazilian I have never in my life seen a picanha be prepped and cooked this way and I’m very upset about it.. wow!
