Homemade bagels, enjoy!

    **Total Time: 2hr 30m**

    **Servings: 8 pieces**

    **Ingredients:**

    * water at 35°C, 300g
    * dry yeast, 10g
    * sugar, 20g
    * flour, 500g
    * salt, 6g
    * egg, 1p
    * black & white sesame seeds

    **Instructions:**

    1. add water, yeast, and sugar into a small bowl + mix + let it rest for 10m
    2. add flour, salt, and yeast mixture into a large bowl + mix using your hand
    3. turn dough out onto a work surface + knead for 10m (until dough has silky smooth surface)
    4. place dough in a large oiled bowl + cover with a towel + let it rest for 1hr
    5. turn dough out onto a work surface + divide into 8 pieces + shape each into a ball
    6. place balls onto a baking sheet + cover with a towel + let them rest for 10m
    7. press a floured thumb and index finger through the center of each ball to make a hole
    8. boil each ball for 1-2m per side in a pot of boiling water
    9. drain and place balls onto a baking sheet + brush with egg wash + sprinkle sesame seeds
    10. bake in the oven at 200°C for 20m + take them out and let them rest on a cooling rack
