Had some family from Monterrey visiting over the holidays and they brought me packs of arrachera. Threw it right over the coals and made a salsa to go with it.

Looks delicious! Tip from a true amateur… cut it the other way, against the grain. Makes it far more tender.

Lump your charcoal over to one side of the grill, sear the meat on both sides and then Let it hang out on the other side of the grill away from the charcoal and cover the grill with your lid.
