Prepare the Brinjals:

Take medium-sized brinjals, wash them, and make crosswise slits while keeping the top intact. Soak them in water to avoid discoloration.
Make the Masala Paste:

Dry roast sesame seeds, dry coconut, cumin seeds, and dry red chilies. Grind them into a fine paste with tamarind extract, salt, and water.
Stuff the Brinjals:

Fill the prepared masala paste into the slits of the brinjals.
Cook the Curry:

Heat oil in a pan, add mustard seeds, curry leaves, and asafoetida. Add the stuffed brinjals and sauté gently.
Add the remaining masala paste and water to create a gravy. Cover and cook until the brinjals are tender and the curry thickens.
