Ingredients:
Fresh fenugreek leaves (methi): 1 bunch (chopped)
Garlic cloves: 8–10
Peanuts: 1/4 cup
Sesame seeds (til): 1 tbsp
Roasted chana dal: 3 tbsp
Cumin seeds (jeera): 1 tsp
Ginger-Garlic: 1 tbsp (chopped)
Dry red chilies: 1–2
Onion: 1 (finely chopped)
Tomato: 1 (chopped)
Turmeric powder (haldi): 1/2 tsp
Kashmiri red chili powder: 1 tsp
Coriander powder: 1 tbsp
Cumin powder: 1 tsp
Salt: to taste
Water: as needed
Step-by-Step Instructions:
1️⃣ Prepare the Peanut Paste:
Grind peanuts, roasted chana dal, and sesame seeds into a smooth paste using a little water.
2️⃣ Sauté the Methi:
Heat oil in a pan. Sauté garlic cloves and chopped methi leaves until slightly wilted. Remove and set aside.
3️⃣ Prepare the Base:
In another pan, heat oil. Add cumin seeds, ginger-garlic, and dry red chilies.
Sauté for a few seconds, then add chopped onions and cook until golden.
4️⃣ Add Tomatoes:
Stir in chopped tomatoes and cook until the oil separates.
5️⃣ Spice it Up:
Add turmeric, Kashmiri red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for 1–2 minutes.
6️⃣ Combine with Peanut Paste:
Add the prepared peanut paste and a little water. Cook for 3–4 minutes until the gravy thickens.
7️⃣ Finish with Methi:
