This has been my latest lunch "hack" – eating just this for lunch leaves me feeling full and satisfied for a reasonable amount of calories! Romaine lettuce not only makes the salad more filling, but adds a satisfying crunch.
Scroll for calorie breakdown – the shrimp helps me to meet my protein goals and you can adjust the proportions of each ingredient to your liking. In addition to the bolthouse dressing, I also add salt, pepper, garlic powder, onion powder. You can choose any dressing you would like.
Recipe:
1. Steam potatoes, carrot, and unpeeled egg until carrots are fork-tender.
2. Mash these 3 together
3. Chop up the lettuce, incorporate the lettuce and shrimp into the mash
4. Add seasoning of choice
5. Voila!
