I cook my streaks directly over charcoal and flip every 15 seconds until I like the color and then move it to the cool side and shut the lid til it hits temp. I've had people express concern that they look 'burnt' but always love the flavor. I also like a southeast Asian style marinade that has some sugar in it, so it definitely does char.

I like my steaks and the people I serve would tell me if they didn't, I've done sous vide, reverse sear, smoking, dry/wet aging, and most of the less-stupid YouTube trends (I'm not deep frying wagyu in msg), and this is just my carefree method. Just curious what people think

    It looks fine to me. The big question is whether or not it tastes bitter.

    Savory = tasty crust / Maillard reaction
    Bitter = burnt

    As a metaphor, briskets can be pitch black but not burnt. It’s all the Maillard reaction darkening the surface with flavor.

    There are some burned spots. If I ordered this from a restaurant I’d be a little disappointed, but still eat it. If a friend cooked this I’d eat it without a cross word.

    Don’t listen to the melted brain, social media cry babies. Most people don’t even cook their own steaks. Maybe they cook 3 steaks a year and revolve their entire weeks around getting it just like that sick edit on YouTube. People that grill/ bbq regularly know better. You’re killing it
