Carrot Hummus, Maple Glazed Carrots and Zucchini Lentilgnese Boats

Maple Glazed Carrots 🥕

1 bag of Baby Carrots
Onion Powder (I use Shallot Powder)
Garlic Powder
Paprika Seasoning
1 TBSP Maple Syrup

Coat the top of the carrots in the spices but not the Maple Syrup. Toss well.
Air Roast at 390 for 6 minutes, toss, air roast an additional 6 minutes.

Once Roasted toss with Maple Syrup.

You will use 1 cup of the Roasted carrots.

Carrot 🥕 Hummus

1 cup of the Glazed carrots and all the maple juice from the carrots
1 cup cooked chick peas
1 tsp fresh minced garlic
2 -3 oz of Aquafaba
1 TBSP Tahini

Process the ingredients until fluffy.
Enjoy with fresh cut veggies.

I like to sprinkle toasted sesame seeds, sumac, smoked paprika, za’atar on top before serving.

Zucchini Lentilgnese Boats 🛶

1 large Zucchini cut lengthwise, scored and the meat scooped out.
Mix with 1 cup lentilgnese
Mix 1 1/2 TBSP Nooch

Bake at 350 until top golden and heated through. about 10-15 minutes

Hearts of Palm Salad

I mentioned this but didn’t make it.

1 can Hearts of Palm (have a lot of iron)
grape tomatoes sliced in half
cubed cucumbers
Callender’s Greek no sodium seasoning
1 whole lime juiced
1 cup cooked chickpeas

I make my dried beans now in the instant pot not the air fryer.
