Got a great deal on the pasta maker from Amazon during Boxing Week and based on the great advice here, sprung for some brass dies from Italy to take it up another level.

Very happy with the results, just used 00 flour and water per manufacturer’s recommendations.

Added it to a sauce of butter, olive oil, pasta water, mushrooms, peas and homemade pesto (basil, olive oil, garlic, pine nuts, Parmesan and lemon zest and juice, I like the acidity and it helps keeps its colour).

    If you’re investing in bronze dies, you owe it to yourself to buy finely ground semolina and use that instead of 00.

  2. Very nice! I remember that 00 flour pasta can be very satisfying although I haven’t used it for a while, usually I take semolina + one egg. Which shape did you use?
