Fucking stop with the toppings. Biting into a nasty radish and a whole ass jalapeno slice is going to mask any taste of the fish.

I’m trying to branch out too, but good yellowtail is *really* hard to beat! What other fish can be that buttery? I’ve only had a few pieces of salmon and bluefin that were similar in that regard

I’ve tried quite a few but I always go back to yellowtail as ny fav. Sometimes blue fin chutoro beats it out. But I’ve also never had yellowtail chutoro or ootoro.

It’s great! But there are some amazing things like mackerel (saba) and snapper (madai) that can balance that awesome taste and texture of hamachi. The options are almost endless, enjoy your sushi.
