I am so stinking proud of myself for not giving up, sourdough will test your patience for sure. Tried once before to make a loaf and it just didn’t rise like it should have but I found the below recipe and my starter, about a month old, finally was ready!

  2. I think the main thing was your starter being ready.

    Basic recipe/technique. Dozens like it online.
    Only simpler methods are no knead. Just mix well and let ferment.

    77% hydration, 2.2⅝ salt, 20% inoculation.
    936g if dough is a little bigger than my normal loaf (700g) but I make two at a time.
