that meat looks boiled and has 0 seasoning, if u wanna do minced meat properly just place it on a properly hot pan and dont break it apart or touch it, let it brown properly, and add seasoning when its almost ready

Add a small sprinkle of tumeric to the meat for color (not too much, it’s very bitter)
Or add paprika, that also adds color

This looks good to me, flat rice noodles are yummy with ground beef/pork, doesn’t need too much seasoning, just fragrant ingredients, and a good savory sauce like hoisin or oyster.
