My boyfriend’s birthday is side by side with Christmas. He’s been (jokingly) asking for a Beef Wellington Birthday for years. I officially delivered!
Pictured are both Wellington’s cut in half. Took a solid couple of hours prep since I had to mince everything (no food processor lol). I know it seems to lean more Medium in temp but I think the picture does them an injustice. It was juicy as hell I promise.
Not pictured is the White Russians that helped… a lot
