I'm from New England, and everytime I see the southern version of "gravy" I cringe…that's alfredo sauce…which aparently is American and not Italian. Gravy uses pan dripings people! I'm sure that "gravy" is delicious, but if that's what southerners call gravy TF is what they make with Turkey or Roast Beef, etc.?
I'm vegetarian but damn, boy, those are some very sexy steaks.
I do a little red wine wash on my raw steak before putting it in the flower mixture. I think your steaks need to be a bit thicker and don’t leave it in the wine too long or it’ll start to disintegrate the meat. It’s something you need to play with to get it right, but it’s worth the effort.
I think I've had chicken fried steak once in my life. My Arkansan Dad loved it though!
I had what I initially thought was a chicken fried steak at a diner somewhat recently. Turns out it was a chicken fried pork 'steak'. Talked to the server about it, cause it said steak on the menu, and he kept saying it was a typo. IDK how you make that typo, but I got it anyway, it was still great.

While pooring the gravy on top does make it look nicer, I prefer to have it on the side and to dip pieces of the steak in it, so that the crust doesn't get soggy.
It’s not smashing the meat so much as tenderizing it. And generally we use something thicker and pound it out to about that thickness it gets very tender after cooking

How about a New York Cheesecake or a No-Bake Cheesecake next? Clam chowder, beef stroganoff, pulled pork sandwiches, beef brisket, pineapple upside down cake, brownies, cinnamon rolls, etc. You're doing great, Andre!
Cheaper cuts of beef are usually tough so one needs to "tenderize" them by beating them up – or "smashing" the meat! They make special mallets for this or you can just wack with an empty beer or wine bottle! Ok when your oil starts to bubble flick a drop or 2 of water in, if it fizzles like crazy its hot enough. You want those little bits from frying, its called "fond" they add flavor and texture to the gravy. Yes you should put in all the milk, otherwise what's in the pan will lump up and be harder when you put the rest of the milk to blend and be creamy.
You are on a roll with these cooking videos! Need to get a good chili recipe! I have a great one but there are hundreds out there. Still, there is nothing that says America like a good pot of chili.

When breading stuff, do one hand wet, and the other hand for the dry. It makes it easier.

Always make a bit more gravy than you think you'll need, just in case you want some more, and if you think you've used too much, you've used the right amount. If any is left over, grab some bread and use it to clean up the excess gravy. If you're full, save the gravy soaked bread for later or share it with someone that could go for a little more.
Do the same using chicken instead of steak. Yummy.

Dry hand, wet hand. One hand to apply flour, the other hand for egg wash. Keeps clean. Flour doesn’t stick and turn to sticky bread between fingers.
You should try chili cheese dogs and chili cheese burgers (if you already haven't tried them yet).
I put the breaded steak in the freezer for about 15 minutes before frying which helps the breading stay on the steak while frying.

Chicken Fried Steak is one of my all time favorites but I haven't had it in years. I don't use milk at all. Just eggs. Is thicker and sticks better.
To test how how hot the oil is, just flip alittle sprinkle of water in the pan and if it sizzles up, it's ready. They look great! Now need mashed potatoes and cream gravy and a veggie OR fried eggs and fried potatoes with cream gravy! YUM! No garlic in cream gravy. Looks Perfect. THERE IS NEVER TOO MUCH GRAVY! rofl.
