500g high protein AP flour (yes I’m out of bread flour), 350g water, 100g starter, 12g salt, 8 hour bulk fermentation @21c – so far I’ve been struggling to get good oven spring and nice open crumb, but at least nailed the most useless feature, a gigantic ear
