I’ve been curious about this method for a while. I don’t have a vortex and don’t feel like spending $70 for one. My question is: if I just pile the charcoal in the middle, but don’t cover them with the vortex, would my results be acceptable? Or do I absolutely need the vortex? TYIA.

Vortex is good for wings, but definitely not so much for thighs for sure. I prefer crispy skin, not charred.
