Roast Cauliflower Mac & Cheese

🥦 Creamy, cheesy mac & cheese meets the rich, nutty flavor of roasted cauliflower in this elevated comfort dish. Perfect as a cozy meal for two or a satisfying side for four to six.

🧀 The sauce is a blend of Gruyere, cheddar, and fontina, melted into silky Gran Cucina Cooking Cream and seasoned with a touch of hot sauce for depth. Tossed with perfectly cooked pasta and golden, caramelized cauliflower, it’s a dish that’s simple to make but packed with flavor.

Ingredients
For the Mac & Cheese
• 200g Gran Cucina Cooking Cream
• 75g Gruyere cheese
• 75g sharp cheddar
• 50g Fontina cheese
• 1/4 tsp hot sauce
For the Cauliflower
• 1 medium cauliflower, cut into florets
• 50g Parmigiano Reggiano, grated
• Olive oil, salt, pepper
• Parsley, chopped
For the Pasta
• 250g short pasta
• 2 liters water
• 30g salt

Method
➊ Toss cauliflower florets with olive oil, salt, pepper, and grated Parmigiano Reggiano. Roast on a hot tray at 200°C for 15 minutes until golden and tender.
➋ Boil pasta in salted water, cooking for 1 minute less than the packet instructions.
➌ Heat Gran Cucina Cooking Cream in a saucepan until simmering, then turn off the heat and fold in cheeses one handful at a time until smooth. Season with salt and a dash of hot sauce.
➍ Combine cooked pasta with the cheese sauce and half the roasted cauliflower.
➎ Top with the remaining cauliflower and sprinkle with chopped parsley before serving.
