I’ve also been doing provel and peppered salami and it makes a great simple but unique sandwich bread for griddled hot sandwiches. Sorta like a Paine au Bacon.

Recipe:

450g KA Bread Flour
275g 105° water
100g starter
11g salt

  • Mix starter and water in stand mixer with whisk, add salt, whisk.
  • Add flour and mix until combined.
  • Cover and rest for 10-15 minutes
  • mix with dough hook for 5-7 minutes
  • bulk ferment till doubled in size
  • laminate in deli-style chopped jalapeños and shredded sharp cheddar
  • cold proof at 40° for ~18 hours
  • bake at 525 in covered Dutch oven with 2 ice cubes for 30 minutes
  • bake on rack for ~15 minutes at 450-475 or until done

    looks great — i love jalapeno and cheddar bread. Do you always do ice cubes in your dutch oven? The evaporating water from the loaf is usually enough to keep your scores sufficiently separating — 525 is quite hot, if you’re getting heat-seared cuts (without ice cubes) you could drop that temp a bit to 485 even, or score deeper. You’ve got a great edge on that score — but I’m not seeing as much opening of the crumb, or exploding belly as I would expect to see underneath the rising ear in a cold-proofed bread. Your proofing process must be down solid to be putting out nice loaves like that. You might be able to get some extra spring or lift by omitting the ice cubes — just my 2 cents. Delicious!

    Sun-dried tomato and Costal cheddar

    Clemata olive and gruyere cheese

    – castrelvano and Kalamata olives with lemon zest
    – gochujang and roasted garlic
    – chili crisp (or salsa macha)
    – roasted green chile and cheddar
    – tahini swirl and roasted garlic
    – dark chocolate and chili
    – dark chocolate and dried cherry
    – white chocolate/cranberry/pistachio
    – lots of mixed seeds
    – cinnamon raisin

    While people are here talking about inclusions:

    I just made my first inclusion loaf, with roasted garlic and shaved parmesan. I left the garlic cloves whole but after baking, the cloves I think shrank slightly, meaning they were sitting in little pockets, so when you slice the bread the cloves just fall out.

    Should I have chopped the garlic? Or did I miss something I could have done? I thought it would be cool to leave the cloves whole.

    I did a pumpkin chocolate chip sourdough recently that was delicious if you want something sweet and if you like spicy my favorite is habanero and cheese!

    A favorite has been olive oil and rosemary, my son likes pepperoni and cheddar, I’ve done cinnamon and brown sugar and s’mores which were both delicious.
