Filling is just eggs, kewpie mayo, salt, pepper, and sugar. Bread is a locally made shokupan with the crust cut off. Tasted good but I’ve got a ways to go to match the ones in Japan.

  1. I suggest finding some karashi mustard at an Asian supermarket. That might be what you feel is missing. But beware, it’s super strong. Like 10x Wasabi.
