My current hyperfixation meal (makes FOUR servings):
-one bag of shredded cabbage
-carrot shreds (one cup)
-1/2 cup of Thai peanut satay sauce (I use Trader Joe’s), mix to coat cabbage and carrots
-pre-cooked chicken (12 oz) diced, salt and pepper if needed
-1/4 cup crushed unsalted peanuts
-1 tsp sesame seeds
-pinch of red pepper flakes (optional), and mix again
-serve with fresh cilantro (unless you hate cilantro), a slice of lime (brightens, helps balance the peanut sauce), and a dash of sesame oil (but it really doesn’t need it)
Comes out to about 315 calories per serving. Adjust ingredient amounts to fit your taste!

This is a great idea! I sometimes get the TJs curried chicken salad for an easy lunch but it’s too mayo-y. This seems like a yummy alternative.
