1) Cut your bacon or meat into small strips. I am using pork roast, but chicken or turkey meat works well and is healthier.
2) Marinade for the meat. 1 tbsp light soy sauce, 1 tbsp dark soy sauce, about 1 tbsp Shaoxing wine, and 1 tsp starch (I added a second one at the end).
3) Mix everything well to combine and soak into the meat. Then add a little sesame oil and stir once more.
4) Coarsely chop 2 dried chillies.
5) Chop 4 cloves of garlic.
6) Chop one large carrot into julienne.
7) Cut the cabbage into larger pieces and use your hands to separate the layers. A spatula will be too difficult to use.
8) For the sauce, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon black vinegar, and 1 teaspoon starch. Mix and put on the side.
9) I put some oil in a heated pan to fry—I use canola oil. And I fry the meat. It’s a pork roast, and it gets tough when fried longer.
10) Take the roasted meat out of the pan.
11) A little oil and put the chili peppers.
12) After about 1 minute, add the chopped garlic.
13) When the garlic browns a little and starts to smell nice, add the carrots.
14) You want the carrots crispy, so you’ll roast them for a few minutes.
15) Then add the cabbage. Mix everything up, and the moment the salad turns a little yellow, add a little water and cover it with a lid for about 1 minute.
16) Stir, return the meat, stir, pour in the sauce, and cook for 1-2 minutes to activate the starch and create a thick sauce.
