    Details:

    100g starter
    50g Wholewheat flour
    400g Bread flour
    350g water
    10g of salt

    Mixed all ingredients. Performed 3 stretch+folds all ~30min apart. BF for 6-7hours. Did one series of coil folds and a final bench rest of 30mim before shaping and tossing in the fridge. Only had it in the fridge for ~7hours b/c i was in a rush to bake this. Baked at 500F in a dutch oven for ~25min then uncovered at 400-450F for another 30min.
