  2. Quick question: After taking the dough out of the fridge and scoring it, do you put it directly into the oven, or do you let it rest? If you let it rest, how long do you recommend? Should I expect the dough to rise during this time and perform the test of compressing it to see if it springs back slowly or holds its shape? Also, if any, do you use the float test at this stage? Thank you!
