Smoked some Cubans tonight. Thin cut pork chops pounded flat, put a thin layer of Cuban mustard on the chop, then a piece of deli ham, Swiss cheese and a dill pickle slice. Rolled up and wrapped with bacon. Smoked at 275 for 45 minutes, brushed with a mix of the Cuban mustard and some random BBQ sauce I had in the fridge. Smoked for 8 more minutes, flipped and brushed the other side. Smoked for another 8 minutes. Turned out pretty good. A had a couple chops I should have gotten more flat, the one in the picture is one of them. Other than that, I am pretty happy with them. Will make them again just making sure to pound the chops flatter and maybe cut back a few minutes on the cook. It was cold tonight so I was trying to not undercook but I think I went a couple minutes too far.
