I made a one-egg omelette with scallions and smoked Gouda, pan-fried mortadella, smashed avocado top and bottom, sliced Campari tomatoes, homemade maple mustard aioli, and Mari Sharp’s Red Habanero hot sauce, all on a buttered and toasted Martin’s Hoagie Roll. I tightly wrapped it in for a few minutes which really helped to keep it from getting too messy!
