Made roast pork sandwiches for family dinner while we watch the Eagles game.

Every states Friday night when I deboned and seasoned a blade roast, then left it wrapped in the fridge. Saturday afternoon was making rolls and roasting the pork. Refrigerated the pork until this afternoon, and then I sliced it thin and tossed it in the jus to slowly reheat. While that happened, I sauteed the broccoli rabe. Once that was all done, I built the sandwiches – melted the cheese on the rolls, layer in the pork, and stuffed the middle with the rabe mixture. Served with my house-famous "Dad Fries".

Absolutely delicious.

    This should be the sandwich Philadelphia is known for. Pork with rabe and sharp prov is way better than a cheesesteak

  3. Really nice work, OP. Kudos for baking your own rolls too. It’s so hard to find sesame seeded rolls where I live.
