


13.5 pound brisket. Cooked overnight at 225 and wrapped at 172 when I saw the brisket set. Wrapped in butcher paper and put some tallow on it and cooked for another 3.5 hours till it reaches 203 degrees. Rested on the counter for 30 minutes and then put in the cooler for 3 hrs to rest.
