Personally, if I was using chicken breasts I would use bigger chunks and skip the sear. That should make them a bit more forgiving

I'm not a fan of chicken thighs (at least what they sell in Tesco UK); if I made this with breast I'd reheat everything but the chicken and maybe just give throw it in for the last 45 seconds so it isn't stone cold.
Since you are already using the oven, you could instead roast the garlic with the carrots or separately wrapped in foil and then mash it into the potatoes for a different flavor.
You can still see him use the plastic containers in this video when he's made other batches lol. And in the thumbnail itself.
Chicken breasts are like rubbers, you know you should use them but you don’t.
Also wet a paper towel, wring out the water then place it over the food then but it in the microwave that helps a lot

0:46. The downside with chicken thighs is they taste like an old man's asshole. The only way that I can eat chicken thighs that I can stomach is by putting them in the Instantpot until they shred apart. That seems to take away the ass flavor. I've had chicken thighs twice at nicer restaurants and they still tasted awful.
Just stick the whole carrot in the oven on a pan.
Tastes just as good.

How is 2teaspoon = 6g (garlic powder/onion powder), but 1 tablespoon of dried basil is 1g? This measurement does not seem to make sense
Made this today. If you have to use chicken breasts, I would suggest you brine them first. This can really help them keep some moisture.

Made this for dinner tonight while subbing out the carrots for some veggies of our own choose. This one is absolutely dynamite and wonderful comfort food. The great thing about mash potatoes is you can change them easily to suit your liking, but the recipe you put out here produces some lovely mash just on its own. The chicken is really flavorful; we used breast instead of thighs to keep it a touch leaner since the potatoes are already quite the splurge!
This one is definitely going in the recipe book.
