Corporate kitchen, large chain. Buddy gets not only more hourly than anyone else (except his father) he also gets full time. No one here gets full time anymore. He also tried to buck on me when I told him that he’s being an idiot. You can’t lay your raw butter on top of the salmon in thawing….
My hours keep getting cut though.

Yeah, no way would I ever work in a kitchen again without getting health insurance. Part-time is up to 32 hours, which is 8 hours shy of full-time. No way. For how much kitchen work wears you down and significantly stumps your career growth, health insurance is the least everyone deserves.

What’s the reason? Surely in their mind it must exist.
Also, what’s done with the butter afterwards? What’s its purpose?
If it makes a buerre blanc for the salmon, I’d say maybe ok, I’ll let it slide. But if it’s used for anything non-fish related I’d be hesitant to use it

Power thawing should also occur under running water. Salmon should be removed from reduced oxygen packaging. That’s on top of the cross contamination you pointed out and the hierarchy concern of raw seafood above (I assume) unwashed vegetables. If those potatoes are ready to eat, that increases the risk. These concerns should be brought to the management team or even area supervisor. This could make people very sick.
